OATMEAL BUTTERSCOTCH COOKIES

  1. Preheat the oven to 375°.
  2. Combine flour, baking soda, cinnamon, and salt together in a small bowl.
  3. Beat the butter, sugars, eggs, and vanilla in a mixing bowl. Gradually beat in the flour mixture, then oats until mixed thoroughly.
  4. Stir in the butterscotch chips.
  5. Drop by rounded tablespoons onto a cookie sheet. Flatten slightly, with the palm of your hand. Add 3 extra chips strategically to the tops of each cookie. This is optional and just for looks.
  6. Bake 10 minutes, or until edges are golden brown.
  7. Cool for 1 minute, then transfer to a wire rack.
