Our Favorite Banana Bread

I love everything about banana bread, it’s one of those things that has been around forever, but you just never get tired of! So, it’s no wonder I’m not disappointed when we have several bananas that have been around a bit too long and are looking spotted. Let it be known, though, I do not use them when they are spotted. I wait until the peels turn black. That’s right.
Completely black.
That’s when the starch in the banana has turned almost completely to sugar, making it perfect for delicious banana bread. When I make this, my kids can’t get enough of it!
Favorite Banana Bread

Ingredients:
1/4 cup sugar
1 tsp. cinnamon
3/4 cup butter
3 cups white sugar
3 eggs
6 very ripe bananas
1 (16 oz) container sour cream
2 tsp vanilla
2 tsp cinnamon
1/2 tsp salt
3 tsp baking soda
4 1/2 cups flour
1 cup chopped walnuts (optional)
Directions:
Preheat oven to 300, and grease (4) 7 X 3 bread pans.
1. In a small bowl, stir together 1/4 cup sugar and 1 tsp cinnamon, and dust pans lightly.
2. Cream together the butter and 3 cups of sugar.
3. Mix in eggs, mashed bananas, sour cream, vanilla, and cinnamon until blended.
4. Mix in salt, baking soda, and flour. Stir in nuts, if desired.
5. Bake for 1 hour or until toothpick inserted into center comes out clean.
