RICK’S FAVORITE CHICKEN…
I’m sure it has a different name, but to us it’s known as Rick’s Favorite Chicken. If you need a new chicken recipe in your life, THIS is one to try!
What’s so special about it? Hands down the juicy sauce! The ketchup, brown sugar, onions and vinegar combine to make a mouth watering blend of goodness. Poured over the chicken and baked together until the chicken is fully cooked, this sauce is SO GOOD.
We ALWAYS make this dish with baked potatoes. In fact, this really should be called “Rick’s Favorite Chicken and Baked Potatoes” because at our home, the potatoes play an important role.
Most of the time I will one-and-a-half times the juice so that there is enough to spoon onto our baked potatoes! Spoon PLENTY of sauce on your potato!! And don’t forget to add a big dollop of sour cream!!
Mmmm… SO GOOD!!
We make it mostly for Sunday dinner, however it’s an easy fix for any night of the week. It’s “Picky Kids Tested” on my two youngest who are tricky to feed and they LOVE it and have loved it for years. That is, as long as they can scrape off the onions. 😉 The baking dish that I use for this recipe is HERE.

- 1 cup ketchup
- 1 cup water
- 1/2 cup brown sugar
- 1 large onion, minced
- 1/4 cup white vinegar
- Aprox. 5 lbs. chicken or ribs I use boneless skinless breasts and cut large onions in half
Ingredients

- Brown chicken or ribs. Place in a 9X13 pan.
- Mix all the rest of the ingredients together then pour over the chicken.
- Bake, covered, for 1 hour at 350° to 375°. Or if you are baking potatoes with it, continue baking chicken until the potatoes are cooked through.
