Sweet And Sour Chicken

This recipe is so eeeeeaassy to make, especially if you have cooked and cut up chicken ready to go. Whenever I make it, happy sounds come out of my teenagers! They turn into gooey little children that need their mother again. You know? Some of my most satisfying moments are when I watch my family devour the food that I have made for dinner. It does a mother’s heart good!
Sweet and Sour Chicken

Ingredients:
1 large green pepper, diced
3 green onions, thinly sliced
1 8-ounce can unsweetened pineapple tidbits, drained, saving the juice!
1 cup chicken broth or 1 bouillon cube in 1 cup hot water
1-2 Tbs soy sauce
3 Tbs vinegar
3-4 Tbs brown sugar or honey (to taste)
A pinch of salt
2 Tbs cornstarch
1/4 cup cold water
2 cups cooked and cubed chicken
3 cups cooked brown or white rice (1 cup raw)
Directions:
Saute green pepper, onion, and pineapple tidbits in nonstick fry pan for 3-5 minutes. Add broth, pineapple juice, soy sauce, vinegar, and brown sugar. Stir cornstarch into cold water. Add to mixture. Cook and stir gently until thickened. Add chicken, and heat through. Serve over rice.
