Healthy Delicious Granola

That’s right… it’s healthy AND delicious!
(Not everything that’s healthy is delicious….ie: remember the seaweed salad?)
This granola I could seriously eat for each and every meal! (And I’m not just being dramatic… Rick….)  I remember when I was in college and I was craving mom’s granola, I went to the store and spent some good money on some that I thought might be similar.  Got it home and was sorely disappointed.  Nothing beats the crunch of this granola, with all it’s nutty goodness, baked in a delicious syrup.  Many granola recipes that seem healthy are actually very high in fat because of the oil, however, we found that by substituting apple juice concentrate in place of the oil, it cuts out all that fat without compromising any of the taste!  I know this… because I did a side by side.  I was NOT going to sacrifice flavor for fat!
It’s a win / win.
*Plus… One time I didn’t have any apple juice, so I used grape juice concentrate instead..
STILL… just as good!!
It’s a keeper, I’m telling you.

Healthy Delicious Granola

Ingredients:
10 cups of rolled oats
1 cup wheat germ
1 cup ground flax seed
8 oz. coconut
4 cups raw sunflower seeds
 2 cups sesame seeds
3 cups almonds and/or 3 cups of walnuts chopped – I do 3 cups of each!
3 cups brown sugar
3 cups water
3 cups frozen apple juice concentrate
1 cup honey
1 cup molasses
3 tsp. salt
4 tsp. cinnamon
2 Tbs tsp. vanilla
raisins, optional
Directions:
  1. In a large bowl, mix together the first 7 ingredients.
  2. Heat the remaining ingredients (except for the raisins) in a saucepan until heated through.  Pour over oat mixture and stir to coat.
  3. Spread into several (about 5?) 9X13 pans or jelly roll pans.
  4. Bake @ 300 for about 30 minutes, or longer if you like it crunchier.
