OATMEAL BUTTERSCOTCH COOKIES…
Probably my favorite of ALL TIME!
If I had to pick a favorite cookie, these Oatmeal Butterscotch cookies have got to be it!!
I can’t get enough of them. Other cookies I’m fine with eating just one and being done.
But these? I can’t stop!
I justify it by telling myself they have lots of oatmeal in them, which they do. So they’re probably really, really good for me!! (wink)
Maybe I should be eating them for breakfast, too!

If you like butterscotch, then you will love these! These are the perfectly chewy cookie. The touch of cinnamon combined with butterscotch is a match made in heaven. I like THESE but any will work.

Ingredients
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 sticks butter softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 3 cups quick oats
- 2 cups butterscotch chips plus a little more to add to tops of cookie dough balls, for looks

Instructions
- Preheat the oven to 375°.
- Combine flour, baking soda, cinnamon, and salt together in a small bowl.
- Beat the butter, sugars, eggs, and vanilla in a mixing bowl. Gradually beat in the flour mixture, then oats until mixed thoroughly.
- Stir in the butterscotch chips.
- Drop by rounded tablespoons onto a cookie sheet. Flatten slightly, with the palm of your hand. Add 3 extra chips strategically to the tops of each cookie. This is optional and just for looks.
- Bake 10 minutes, or until edges are golden brown.
- Cool for 1 minute, then transfer to a wire rack.
